Our wildflower honey is produced from naturally-managed honeybees raised in custom-built, horizontal beehives. We use chemical-free beekeeping methods to manage the health of our hives and our bees are never fed sugar syrup.
Pressed Honey
This honey is harvested using the traditional pressed method, rather than spinning the frames in an extractor. While this yields less honey overall, the process preserves significantly more pollen, minerals, and beneficial compounds. (In fact, one scientific study showed pressed honey contained 5.6 times more pollen than extracted honey!)
The resulting honey has both a richer, more complex flavor, as well as a higher nutritional value. The honey is then simply strained to remove wax particles — it is never heated or altered in any way.

Half pint jars filled with our raw pressed honey and pieces of cut natural honeycomb. The comb pieces are fully edible — both the honey-filled wax cells and the beeswax itself have numerous health benefits.

A Note on Crystallization
Raw honey naturally crystallizes over time — this is a sign of quality, not spoilage. (If your honey never crystallizes, that's worth questioning!) Different nectar sources will produce honeys with different ratios of glucose and fructose, which affects crystallization speed. Because we harvest only once a year in the fall, each jar contains a diverse blend of all the flowering plants our bees visited throughout the season, and each year's harvest is unique.
Partially crystallized honey is perfectly edible as-is — it spreads beautifully on toast, and can easily be used in recipes as a natural sugar substitute. But if you wish to re-liquefy it, simply set the jar in warm water around 95 to 100°F — roughly the temperature inside a beehive — until the crystals dissolve. Avoid boiling water or microwaving, as excess heat destroys the natural enzymes and delicate flavors that give raw honey its character and nutritional value.
Our hens are pasture-raised, enjoying bugs, grass, and sunshine during the warm months. We move their mobile coop regularly to fresh ground, giving them access to their natural diet while their manure fertilizes the soil. The result is rich, flavorful eggs with deep golden yolks, laid by happy hens!

Our Katahdin/Dorper cross sheep are raised on pasture using rotational grazing methods. These hair sheep shed their coat naturally every spring and have excellent meat quality. They thrive on "rougher" pasture, enjoying the weeds, clover, and grass alike.
